So is ‘low fat’ really healthy?
Recent research is finding that ‘low fat’ actually means more sugar. Start reading your food labels carefully. There is nothing healthy about higher sugar or artificial sweetener content!
So if you’re like me and have a sweet tooth, check out this fudge recipe…
Healthy Peanut Butter Chocolate Fudge Recipe
•1/2 cup raw pecans, almonds, or walnuts
•4-5 tablespoons of your favorite organic nut butter (try cashew butter, almond butter, peanut butter)
• Extra bitter chocolate bar
•2/3 to 3/4 cup organic coconut milk (great source of healthy saturated fat)
•2 tablespoons of rice bran (additional source of fiber)
•2 tablespoons oat bran (healthy fiber including soluble fiber)
•1/2 cup raw pecans, almonds, or walnuts (contains antioxidants and vitamins/minerals)
•1/2 cup dried cranberries or raisins (optional)
•1 teaspoon vanilla extract
•a little stevia to sweeten slightly (stevia is a natural sweetener with no calories, see description below)
Melt the chocolate bar, nut butter, and coconut milk in a medium saucepan over low heat (I prefer to use a bowl over simmering water in a saucepan. This helps keep the chocolate and other ingredients from burning)
Stir continuously with a wooden spoon or whisk.
Once all the ingredients have melted, add the remaining ingredients.
Spread the mixture on parchment paper in a baking dish. Make sure the ingredients have been mixed well so you can spread the mixture into the prepared baking dish.
Place the baking dish in the refrigerator until the mixture solidifies.
You may have seen Stevia in many healthy recipes as an alternative to sugar. So I thought I’d help explain it to you a little more. The Stevia plant is said to be 300 times sweeter than sugar. The good thing about using Stevia instead of sugar is that it has hardly any effect on blood glucose levels and is calorie free.
You can buy Stevia in health food stores and also in many supermarkets.
This delicious treat is still high in calories, but it’s super healthy, so keep portions small and use it as a tasty mid-afternoon treat to go all the way to dinner. The great news is that fudge has fewer calories and sugar than the fudge you would normally buy at a store.
