Easy Chocolate Oatmeal Bars

What do you need:

  • 3 cups quick-cooking oats

  • 1 cup semisweet chocolate chips

  • 1 cup of butter

  • 1/2 cup peanut butter

  • 1/2 cup packed brown sugar

  • 1 teaspoon vanilla extract

In a saucepan over medium heat, melt the butter, then add the brown sugar and vanilla. Add quick cooking oats, reduce heat to low, and cook for 2-3 minutes. Remove from heat and press half of the cooked oats into a greased 9×9-inch skillet. Reserve the remaining oats to cover.

In the same saucepan, add the chocolate chips and peanut butter and melt over low heat, stirring frequently. Stir until the mixture is smooth, then pour over the rolled oats in the pan. Using the back of the spoon, distribute the mixture evenly.

Cover the chocolate layer with the reserved oats, pressing gently. Cover and refrigerate overnight. When ready, place at room temperature for a few minutes before cutting into bars.
